Pastry Chef / Master Chocolatier 

Chef Oscar Ortega was born in Mexico City where his culinary inspiration began.  After realizing his passion & skill for culinary creations, he decided to begin his studies in pastry arts at Cast Alimenti, Italy.  Ortega furthered his education by attending various courses in pastry, chocolate and sugar work.  His abilities and passion for pastries grew, expanding and working years throughout the UK, Italy, France and USA. 

In 2004 Ortega opened his first pastry shop, Cioccolato in Jackson Hole, Wyoming USA. This is where he created his first exclusive line of Artisan Chocolates and Fine Confections.  Shortly thereafter, he took the opportunity and formed the first Mexican Pasty Team to compete in International pastry competitions.  In 2009 Cioccolato expanded and was renamed Atelier Ortega (AO).  Today AO is a thriving business that produces an extensive variety of Artisan Chocolates, Desserts, Entremets, Confections, Artisan Bread and Viennoiserie serving its global customer base. 

In 2009 Chef Ortega became the first Mexican Chocolate Master, and represented Mexico in the World Chocolate Masters Finals.  He competed in the World Pastry Team Championship in 2006, 2008,  2010, 2012 and in the Mondial des Arts du Sucr, Paris in 2008.  He was also the captain of team Mexico in the Coupe du Monde de la Patisserie 2007 and participated and was awarded in many other national and international pastry competitions.  Ortega’s work has been featured in national and international Television specials (PBS, TLC, Discovery Channel, Food Network, Travel Channel) as well as being featured in pastry and food national and international magazines. 
 
In 2011 Chef Ortega was named one of  the top 10 pastry chef in America, and became the head pastry coach for the USA pastry team that competed in Le Mondial des Arts du Sucre in Paris. In Argentina, he took gold and silver in the Latin American selection for the Gelato World Cup in Italy.  This enabled him to compete in the world finals in Rimini, Italy 2014. 

In 2012 Chef Ortega opened his 2nd shop in Jackson Hole, WY  CocoLove.  This is his retail boutique that carries his exclusive lines of Artisan Chocolates, Desserts, Entremets, Gelato, Confections & a variety Artisan breads.  
Additionally, Chef Ortega works as a pastry consultant, and teaches advanced chocolate and pastry courses both national and internationally. 

Ortega's most recent achievement was in Paris France at the Mondial Des Art Sucres 2014 leading the USA pastry team for this competition and ended among the first top 5 in the world. 

With his extensive competition experience, he founded the Mexican Pastry Team (MPT), a group of highly skilled, talented and passionate chefs that compete around the world in pursuit of culinary perfection.

Studying art and music in college was the guide Chef Estay chose as her profession and greatest passion in life; the creation of art in chocolate and pastry confections. Lauren quickly discovered that her true calling in life was the art of culinary perfection. This passion began early as she grew up loving to bake for her family. At the age of 13 years, Lauren received her first culinary award.

As a result, in 2008 she studied at the Culinary Institute of America at Greystone in Napa Valley, California, where she earned a more formal education in Pastries. From her studies there, Lauren's talent has given her many hours of practice, finding inspiration in designing unique desserts, cake, pastries and showpieces.

Upon graduation in 2009 she started her professional experience under Chef Oscar Ortega. Since then, she's been Ortega’s assistant and chocolatier in his Atelier.  Lauren has been a member of the Mexican Pastry Team since 2009 when she competed with and assisted chef Ortega with the preparation for team Mexico in the World Pastry Team Championships of 2010 and 2012 as well as the Rimini Junior World Cup 2011. Chef Lauren Estay also has international competition experience competing for Team USA at the Mondial Des Arts Sucre in Paris France in 2012 and most recently in March of 2014, in which the team placed 5th out of 16 international teams.
